While the recipe uses ground beef, one could easily use sliced flank steak instead. The noodles can be almost any type of long, thin pasta including udon, spaghetti, linguine, egg noodles, or ramen. Simply prepare your desired noodle, and you are ready to go. If you prefer to avoid pasta, this stir-fry goes well over white rice too.

Beef Stir-Fry with Noodles
Ingredients
- 8oz ground beef
- 2 sprigs green onion or scallions
- 1 medium onion
- .5 cup shredded carrot
- 1 cup broccoli florets
- .5 tsp ginger
- 1 tbsp garlic
- 8 oz cooked noodles
- 1.5 tbsp vegetable oil (for frying)
Marinade
- 1 tsp low sodium soy sauce
- 1 tsp Shaoxing wine or Mirin
- 1 tbsp cornstarch
Stir-fry Sauce
- 1.5 tbsp brown sugar
- 2 tbsp low sodium beef broth
- 1 tbsp cornstarch
- 1 tbsp Shaoxing wine or mirin
- 2 tbsp low sodium soy sauce
Instructions
- Mix Marinade ingredients with ground beef and set aside. The longer it marinates the more flavor the meat will absorb.
- Mix stir fry sauce and set aside
- Heat vegetable oil in wok over high heat
- Brown ground beef mixture in the pan and then set it aside
- Set heat to medium-high. Add ginger, and chili peppers to wok and briefly fry them before adding garlic and stir fry sauce. Simmer until sauce has thickened. Add cornstarch to help thicken if needed.
- Add ground beef, onion, carrot, broccoli, and green onion and stir-fry until well mixed
- Add cooked noodles and stir until well mixed
