Over a year ago, I started a health journey and this blog. Unfortunately, I soon after started a new job which has been taking a significant amount of my time and energy. Add to that, my sketchy health and completing work on a role-playing game that released on October 1, 2022 and it should be fairly easy to know why this poor blog was left suffering.
The good news is that I'm back and picking up where I left off. I gained 20 pounds since I last posted, mostly due to no exercise and significant overeating. I was more than 3000 calories per day, almost every day. Since restarting my goal to lose weight, I have been aiming at 2000-2200 calories per day and have lost almost 10 pounds in the past month. I have also been working on increasing my exercise by starting to walk 15 minutes per day, which has been upped to 30 minutes starting this week.
If just hearing I'm back doesn't excite you, I'll soon be posting new recipes for you to try. While some of my recipes make enough for a family or to have leftovers, I will be focusing on more single-serving and dinners-for two as my wife and I are looking to add more variety to our diets and we are once more empty-nesters. This isn't to say there won't be any more make ahead options or recipes from holidays and family visits, so don't worry if you are looking to feed others as well as yourself.
