I decided to try something a little different when I made my second batch of burritos by including tomatoes and green chilis in the mix. The result was a slightly higher calorie burrito with a bit of kick and a bit more veggie. This is very likely the recipe I will continue making since I could use the veggies and they are more convenient without a condiment on top.
The following recipe uses turkey sausage, which is recommended for a heart-healthy option, but pork breakfast sausage can be used instead. Using pork will raise the calorie count to around 400 calories.

Ingredients
- 12 large eggs
- 12 8" tortillas (I use flour)
- 2 cups Mexican blend shredded cheese
- 1 cup red bell pepper, chopped
- .5 cup onion, chopped
- 10.5 oz can diced tomatoes and green chilis
- 1 lb turkey breakfast sausage
- .25 tsp black pepper
- .5 tsp chili powder
Instructions
- Brown sausage in a 10" skillet
- Whisk eggs, black pepper, and chili powder in a medium bowl. A splash of milk or water can be added for volume if desired.
- Add tomatoes & chilis, red pepper and onion to skillet, mixing well
- Pour egg into skillet and cook while stirring periodically break up eggs.
- Spoon mixture evenly on to tortillas and roll into burritos.
- Allow to cool then place burritos in freezer bags and freeze. To reheat, place a burrito and heat on high for 1-1.5 minutes.
