Apple Crisp…What else do I need to say?

If ever there was a food that brings back warm memories of growing up, that takes me to a happy place, or that just plain hits the spot, it has got to be apple crisp. Just the thought of the cinnamon and nutmeg blending perfectly with the apples and the buttery, sweet, crisp topping leaves my mouth watering.

As I head into my weight loss journey, I decided I am going to need as much comfort as I can find. So I pulled out my recipe book and planned out these single-serving bowls to prevent me from sitting down and eating the 8x8 pan of crisp by myself. Each serving is just enough and at 232 calories each, you might even have room in your count to add a scoop of vanilla ice cream.

Single-Serving Apple Crisp Bowls

Ingredients

  • 4 cups apples, sliced
  • 1 tsp cinnamon
  • ½ tsp nutmeg

Crumble Topping

  • ¼ cup sugar
  • ½ cup butter
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • ¾ cup flour
  • ½ cup brown sugar

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Grease 8 ramekins (6 oz).
  3. Gently mix apple slices, cinnamon, and nutmeg in a bowl until apples are mostly dusted.
  4. Divide apples evenly among ramekins.
  5. Cream butter and sugar in a bowl.
  6. Add flour and blend until mixture becomes crumbly and no flour is visible.
  7. Spread crumb topping mixture evenly over apples.
  8. Bake at 350 F for 30-40 minutes or until apples are tender and crust is golden.
