My day doesn't start right without a breakfast of some kind. I can also be rather picky about what counts as a breakfast. To avoid going without on days when we don't have time to cook, I put together this recipe for breakfast burritos that can be frozen and then reheated as needed in 1-2 minutes. On more leisurely mornings, you can add salsa to spice them up a bit or scale the recipe back to enjoy them fresh from the skillet.
The following recipe uses turkey sausage, which is recommended for a heart-healthy option, but pork breakfast sausage can be used instead. Using pork will raise the calorie count to around 385 calories.

Breakfast Burrito

Ingredients
- 12 large eggs
- 12 8" tortillas (I use flour)
- 1.5 cups Mexican blend shredded cheese
- 1 cup red bell pepper, chopped
- .5 cup onion, chopped
- 1 lb turkey breakfast sausage
- .25 tsp black pepper
- .5 tsp chili powder
Instructions
- Brown sausage in a 10" skillet.
- Whisk eggs, black pepper, and chili powder in a medium bowl. A splash of milk or water can be added for volume if desired.
- Add pepper and onion to skillet, mixing well.
- Pour egg into skillet and cook while stirring periodically break up eggs.
- Spoon mixture evenly onto tortillas and roll into burritos.
- Allow to cool; then place burritos in freezer bags and freeze. To reheat, place a burrito and heat on high for 1 minute.
